I got an overwhelming amount of people asking for the recipe of this soup. I grew up eating soups like this, with lots of tiny pasta whether stars or letters, tender chicken and carrots, so it always feels especially nostalgic to me. I had a few tomatoes sitting on the counter that I wanted to use up and decided to grate them straight into the broth. It‘s a simple and nostalgic soup that I crave a lot lately! Like every recipe I post, customize this to your liking🫶🏽
Chicken Stelline Soup
Ingredients
2 tablespoons olive oil
1 yellow onion, chopped
3 medium carrots, cut into chunky half-moons
1 garlic clove, finely grated
1 quart (4 cups) homemade chicken stock
1 teaspoon chicken bouillon
2 boneless, skinless chicken breasts
2 medium tomatoes, grated
6 ounces stelline pasta
Kosher salt, to taste
Freshly ground black pepper, to taste
Fresh lemon juice, to taste
Finely grated Parmesan, for serving
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and carrots and cook for 4–5 minutes, stirring occasionally, until the onion begins to soften. Add the grated garlic and cook for another 30 seconds.
Pour in the chicken stock and stir in the chicken bouillon. Bring to a gentle simmer.
Nestle the chicken breasts into the broth. Cover and gently simmer for 12–15 minutes, or until the thickest part of the chicken reaches 165°F on an instant-read thermometer.
Transfer the chicken to a cutting board and let it rest for a few minutes before shredding with two forks.
Return the broth to a gentle simmer. Add the stelline and cook according to the package directions, stirring occasionally so it doesn’t stick to the bottom.
While the pasta cooks, grate the tomatoes on the large holes of a box grater, discarding the skins.
When the pasta is almost tender, return the shredded chicken to the pot and stir in the grated tomatoes. Simmer for another 2–3 minutes. Taste and season with salt and pepper as needed.
Ladle into bowls and finish with a generous grating of Parmesan and a squeeze of fresh lemon juice.
